the garlickiest rice pilaf
1 1/2c chicken or vegetable broth
2tbsp butter
1c minced sweet onion
1/2c minced green bell pepper
7 big garlic cloves - thinly sliced
1c jasmine rice
AN green onion - thinly sliced
TT salt and pepper
ingredients
1. Preheat your oven to 350°F. Mince your onion and bell pepper, and slice your garlic and green onion. In a small pot, set your broth over high heat and bring it to a boil.
2. Melt your butter in an oven-safe pot or rondeau set over medium-high heat. Add your onion and bell pepper and sauté for 2–3 minutes, or until soft and fragrant. Add your garlic and continue to sauté for another minute.
3. Add your dry rice to the pan with the vegetables and stir constantly to coat the rice in butter and lightly toast it, about 2–3 minutes. Add your boiling stock, cover the pot with a tight-fitting lid, and carefully transfer it to the oven. Bake for about 15 minutes, or until all the liquid has evaporated.
4. Gently fold your green onions into the cooked rice, being careful not to overstir and cause the rice to break apart and become mushy. Serve hot on its own or with your favorite protein.

It might be a little hyperbolic of me to call this “the garlickiest,” but it’s still quite garlicky, so I’m sticking to it. Making rice pilaf is the easiest way to make a boring dinner so much more interesting and when you’ve made it once, you could make it again 100 times over without needing a recipe ever again. It’s not traditional, but you can also use any vegetables you want. This one airs on the side of Cajun by using the holy trinity, but I first learned it using a classic French mirepoix (2 parts onion, 1 part celery, 1 part carrot). Both versions are equally delicious.
Cooking rice in chicken broth, instead of water, is a very strong move that adds instant flavor. If you’d prefer this to be a vegetarian rice pilaf, then opt for vegetable broth, but either one will be far more delicious than water with no added effort.
