1/4c white wine vinegar
1/2tsp lemon zest

1/2tbsp dijon mustard
1 tbsp lavender honey
pinch of kosher salt
pinch of freshly ground black pepper
1tsp dried lavender flowers
3/4c oil - equal parts olive oil
and avocado oil
process
if using an immersion blender:
1. Combine all ingredients and blend until fully emulsified.

the old school way:
1. Combine all ingredients, except for the oil, in a bowl. Whisk to combine.

2. With one hand, slowly drizzle your oil into the vinegar mixture. With the other hand, whisky vigorously and constantly.

3. Continue until all oil is incorporated and emulsified.

a bright and floral summertime salad dressing
All those junky store-bought salad dressings don’t deserve your fresh, crisp greens. If you’re going to make anything from scratch, let it be salad dressing. They’re so easy and fun to experiment with — plus, I guarantee you have some kind of oil and some kind of vinegar in your pantry right now, which is really all you need. You could make this recipe with just oil, vinegar, mustard, and a few seasonings, and it would still turn out great.

Lavender is one of my favorite things that grows out of the ground. And this lavender honey? Incredible. You can find the recipe right here and use it anywhere you’d use regular honey. If you’re not in the mood to make lavender honey yourself, Savannah Bee Company sells a great one. Or just swap in regular honey and add about half a teaspoon more dried lavender flowers. Let me tell you, it’s a game-changing tea sweetener — especially in matcha. Drizzled on a piece of sourdough with a big glob of burrata? Unmatched.
